Winemaker's Notes: Subtle and inviting nose of grilled white peach, dried chamomile, hazelnuts and the classic Paring White lemon curd notes. Immediately mouthwatering and electric on the palate. Sleek and focused attack with a persistent thread of ripe stone fruit that is balanced by a wonderful backbone of bright acidity and a driving mineral brininess. A wine of purity and pleasure. Tremendous length on the refreshing finish.

Winemaker's Notes: Rich, decadent and hedonistic like the Paring Whites of the past, but the 2011 differentiates itself by its heightened sense of lightness and freshness. It has the telltale aromatic notes of lime zest, honey, chamomile, honeydew, fresh cut grass and pear, but the level of mouthwatering acidity takes it up a notch. Some savory notes and saltwater brininess add layers of complexity. On the palate it displays candied pineapple flavors and a backbone defined by Sauvignon Blanc minerality. Herbal, but at the same time so deeply defined by fruit. A gentle phenolic grip adds texture and length. A distinctive creaminess echoes on the finish.

Winemaker's Notes: In this wildly unusual blend, one finds a fascinating balance of herbal, tropical and mineral elements. Though only 13% of the blend, The Paring is strongly influenced by the richness of the Semillon. On the nose it combines with the Sauvignon Blanc to create notes of white flowers, pineapple, pear, sage and fresh cut grass. The Viognier is also active on the aromatic side with vivid honeysuckle notes. The round, supple mid palate exhibits white peach flavors alongside a hint of oak toast and subtle, mouthwatering grip. Bright, vibrant acidity from the Sauvignon Blanc forms the backbone and leads to a fresh, cleansing finish.

Winemaker's Notes: Hedonistic, lifted layers of ripe nectarine, petrol, jasmine, passion fruit and cinnamon spiral out of the glass as all three grapes—sauvignon blanc, sémillon and viognier—shine in unison. On the palate, the bright acidity and focus of the sauvignon blanc dominates the attack and anchors the wine's balance, while the density and elegance of the sémillon enters on the mid palate with a lush, weighty quality. Viognier's richness and exotic ripe fruit nuances take hold on the finish. The 2009 is an astonishingly rich and complete white blend that manages to combine palate weight, explosive aromatics and delicate acid balance into one bottling.

Winemaker's Notes: Ripe and complex nuances of honeysuckle, white peach, dried apricot and tropical fruit. Floral, perfumed and exotic. Dense and decadent on the palate with strong notes of peaches and cream. Viognier jumps out on the nose, while Sémillon lends richness and density to the mid-palate. The Sauvignon Blanc sings on the finish with strong acidity and an herbal addition. Finish reminiscent of peach nectar.

Winemaker's Notes: In 2007, the vineyard gave us great Sauvignon Blanc and Sémillon, hence our rendition of the nervy, freshly herbal whites of Bordeaux. Sauvignon Blanc keeps the wine fresh and vibrant. Sémillon gives density and weight in the mouth. Honeysuckle, bees wax, grapefruit peel, jasmine, and mineral nuances on the nose. Rich and round on the palate.
