So primary on palate; a young wine full of power. A substantial and decadent wall of fine tannins rises on the finish. Young and tight immediately out of the bottle, but full of black fruit after being open a day. A wine of fruit intensity and a chewy structure. It starts out like a steak in the glass, but moves to dark chocolate and notes of Luxardo cherries on the finish. Such fine grained, dusty tannins. Exceptional length. Beautiful ride across palate.

Winemaker's Notes: Perfect combination of sweet and savory on the nose with nuances of black licorice, grilled bread, blood orange zest, sweet cream and black mulberries. Strong notes of incense and white pepper. Exceptional richness and balance. Both vinous and fruit-driven; suave and supple. Racy acidity with firm tannins. Another example of the pop and pour opportunities offered from the 2011 vintage. Finishes with age-worthy tannin, black, brooding fruit and cool climate acidity.

Winemaker's Notes: This wine represents the essence of blackberry pastilles. On the nose it is heady with black fruit and perfumed violets mixed with lifted notes of anise. On the attack it exhibits aged balsamic sweetness and a wall of black fruit followed by complex notes of tar, soy sauce and black olive. It is soft, supple and generous with a velvet texture. Rich and hedonistic, the 2010 Paring GS is oozing with decadent fruit. It remains chewy and dense on the palate. Charcoal, barbeque spices and subtle notes of grilled meat emerge before the tannic profile begins. A hint of black pepper and layers of black fruit echo on the lengthy finish. Front tongue tannins start early and slowly bind the entire palate. It remains dense and sweet at this point with the tannic backbone to age gracefully.

Winemaker's Notes: A fascinating nose of black licorice, plum skin, tar, blackberries, grilled bread, talc, pine needles, mesquite and white pepper, which pulls you deeper and deeper into the glass with every swirl. A dark, brooding and savory wine that displays the beauty of the balancing act between fruit and tannin. On the palate, this wine is all about texture: copious amounts of supple, juicy and sweet black fruit cascade over the palate as the fine-grained tannins start at the front of the tongue and slowly move through the finish. Over time they quietly edge out the fruit, forming a gentle coating that demands a charred rare rib chop.
